Pastel clásico de 3 Leches

Estando de visita en Seattle, me pidió Chris que es súper fan del tres leches que le hiciera uno y al final terminó de pastelero aprendiendo. El tema es que con un tenedor y 2 bowls logramos darle vida a este delicioso postre que según dicen es originario de Nicaragua, y muchos otros países se disputan su creación, se dice que Nestlé también influyó en el mismo. Anexo la receta que está súper buena y la obtuve de la revista Fine Cooking, Ingredients. For the cake: Unsalted butter, softened, for the pan / Mantequilla sin sal para los moldes 4-1/2 oz. (1 cup) unbleached all-purpose flour / harina todo uso 1-1/2 tsp. baking powder / polvo de hornear 1/4 tsp. kosher salt / sal 5 large eggs, at room temperature / unidades de huevos 1 cup granulated sugar / azúcar 1/3 cup whole milk /leche entera 3/4 tsp. pure vanilla extract / extracto de vainilla For the soaking liquid: 1 14-oz. can sweetened condensed milk /leche condensada 1 12-oz. can evaporated milk / leche evaporada 1/2 cup heavy cream /crema de leche Pinch kosher salt /sal For the topping: 2-1/2 cups heavy cream / crema de leche 2 Tbs. confectioners’ sugar / azúcar 1/2 tsp. pure vanilla extract /extracto de vainilla Para hornear el pastel: Coloque una rejilla en el centro del horno y caliente el horno a 350 ° F. Unte con mantequilla el fondo y los lados de un molde para hornear de 9x13 pulgadas Pyrex o un molde de metal y espolvoréelo con harina de trigo. Tamizar la harina, polvo de hornear y la sal en un tazón mediano y reserva.Separar las yemas de las claras en un bol mediano y las yemas en un tazón grande. Añadir la leche y la vainilla y bata hasta que esté homogéneo. Batir las claras de huevo, hasta que lleguen a punto de nieve, de 2 a 3 minutos. Agregar el azúcar restante 1/4 taza, sin dejar de batir, hasta llegar a formar picos, 1 ó 2 minutos más. Batir un tercio de los ingredientes secos a la mezcla de yema hasta que esté bien combinados. Revolver con cuidado en un tercio de las claras de huevo con una espátula de goma añade el resto de ingredientes secos y claras de huevo, hasta que esté totalmente incorporado. Vierta la mezcla en el molde previamente engrasado y enharinado y cocine hasta que al insertar un palillo en el centro, éste salga limpio, 20 a 25 minutos. Deje que el pastel se enfríe en el molde sobre una rejilla durante 10 minutos, y luego invertir la torta sobre la rejilla y dejar enfriar por completo.Vuelva a colocar el pastel en el molde (la torta absorbe más del líquido si se le devuelve al molde). En una cacerola mezcle la leche condensada, leche evaporada, la crema de leche y la sal hasta que la leche condensada se mezcla bien. Cocine a fuego medio-bajo, revolviendo para evitar que se queme, hasta que comience a burbujear en los bordes, de 3 a 5 minutos. Retirar del fuego y verter en un vaso medidor resistente al calor de 4 tazas. Con un palillo de dientes, pinchar el pastel en la parte superior. Vierta el líquido de remojo lentamente a lo largo de la torta, a partir de los bordes y haciendo una pausa para dejar en remojo antes de añadir más. Cubra con papel plástico y refrigere hasta que el pastel esté bien frío, por lo menos 2 horas y un máximo de 24 horas. Cubra el pastel:En un tazón grande, bata la crema con una batidora eléctrica a velocidad media. Cuando empiece a espesar, agregar lentamente el azúcar y la vainilla y seguir batiendo apenas hasta que forme picos firmes, de 3 a 4 minutos (tenga cuidado de no overbeat). Extender la crema batida en toda la parte superior de la tarta y servir). Bake the cake: Position a rack in the center of the oven and heat the oven to 350°F. Butter the bottom and sides of a 9x13-inch Pyrex baking dish or a nonreactive metal pan. Line the bottom of the baking dish or pan with parchment and lightly butter the parchment. Sift the flour, baking powder, and salt into a medium bowl and set aside. Separate the eggs, putting the whites in a medium bowl and the yolks in a large bowl. With an electric mixer, beat the yolks with 3/4 cup of the sugar on medium speed until the mixture is pale and creamy, about 2 minutes. Add the milk and vanilla and beat until combined, 1 minute more. Clean and dry the beaters and then beat the egg whites, gradually increasing the speed to high, until they reach soft peaks, 2 to 3 minutes. Add the remaining 1/4 cup sugar in a stream, continuing to beat on high, until you reach firm but not dry peaks, 1 to 2 minutes more. Whisk a third of the dry ingredients into the yolk mixture until thoroughly combined. Gently fold in a third of the egg whites with a rubber spatula. Fold in the remaining dry ingredients and egg whites, alternately, in two more batches each, until fully incorporated. Pour the batter into the prepared dish or pan and bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Let the cake cool in the pan on a rack for 10 minutes, then invert the cake onto the rack, remove the parchment, and let cool completely. Return the cake to the baking dish or pan (the cake will soak up more of the liquid if returned to the pan it was baked in), or invert it onto a rimmed platter Soak the cake: In a 2-quart saucepan, stir together the condensed milk, evaporated milk, heavy cream, and salt until the condensed milk is well blended. Cook over medium-low heat, stirring to avoid scorching, until it begins to bubble around the edges, 3 to 5 minutes. Remove from the heat and pour into a heatproof 4-cup measuring cup. With a toothpick, prick the cake to the bottom in 1/2-inch intervals. Pour the soaking liquid slowly over the cake, starting at the edges and pausing to let it soak in before adding more. Cover loosely with plastic wrap and refrigerate until the cake is well chilled, at least 2 hours and up to 24 hours. Top the cake: In a large bowl, beat the heavy cream with an electric mixer on medium speed. When it begins to thicken, slowly add the sugar and vanilla and continue to beat just until it holds firm peaks, 3 to 4 minutes (be careful not to overbeat). Spread the whipped cream all over the top of the cake and serve.
